This is, without a doubt, my favorite slightly sweet green juice. It’s also a juice that was born of necessity—a deep need for cellular nourishment on a hot afternoon. Also: It’s super fast to make, with no messy clean-up. To be clear: I don’t own a juicer; instead, I make juice (fiber in, please!) in my VitaMix.

The Green Pearl is a genius juice to make from less-than-fresh fruits and veggies (aka the last scraps from your fridge)—though it calls for cucumber, spinach, lemon, and apple, you could use whatever greens and citrus you have on hand. And though it’s not a no-sugar juice, it’s definitely low-glycemic. The only sugar in it comes from apple.

Why call it the Green Pearl? Because the combination of spinach and cucumber is absolutely creamy—it feels mellow and luscious, rather than astringent and bracing. It’s the green juice to make you (or anyone who puts up a fight) love green juice.

Promise.

If you want it a bit more herby, add some mint or parsley. Want it sweeter? Add a few drops of stevia.

 

Ingredients
  

  • 1 ½ cups fresh spinach leaves washed
  • ½ lemon deseeded and peeled
  • 3- inch cut cucumber
  • ½ apple deseeded
  • 1 cup cold purified water
  • few sprigs mint or parsley optional
  • 3 drops stevia optional

Instructions
 

  • Blend in your Vita-Mix (or other bad-ass blending device). Drink. Feel your cells thanking you.
